The ritual, traditional craft and time taken within the masthouse to select and fashion the timber masts of ships to endure the test of time is the inspiration for our whisky. Spring barley carefully grown and malted to our specification are milled through our four roller mill before being mashed to create a sweet wort, after five days of slow fermentation our wash is ready. Our wash gets distilled through our bespoke copper pot still, the result is a nutty medium bodied new make spirit, with tropical fruity esters, and hint of clover honey. Our new make is matured initially in old bourbon casks before being finished in different oak barrels, such as Sherry butts and sweet wine barrels.
This hand crafted spirit will be available in 2020.
Our Pedro Ximenez and Oloroso barrel aged edition will have notes of raisins, figs, dates and bittersweet dark chocolate. Our Bourbon barrel aged edition will be a light, spicy and peppery whisky with spicy oak, soft orange fruitiness and soft vanilla notes.
Malted barley, Kentish water filtered through chalk beds and a selected mix of yeast strains. Bourbon casks, Sherry butts and dessert wine barrels.
