2000 L of wash is transferred from the fermentation tanks to our whisky still, called “Sandy", to perform our wash distillation. As the temperature slowly rises in the still, the alcohol vapours rise through the copper neck, eventually reaching the condenser where they are condensed to form alcohol at higher strength.

The wash distillation will create 30% ABV low wines from the wash. For whisky production this low wine is distilled again to produce whisky new make at around 73% ABV, which is then placed into oak barrels to mature. During the maturation process, some of the alcohol evaporates and is traditionally called “The Angels Share
