Our Gin is unique to us as it is distilled through our proprietary Banik Still. We call her "Janet". Both, the design of our still and our gin recipe, are closely guarded secrets.
Gin can be produced in two ways, through the process of pot maceration distillation or vapour infusion distillation. Usually, either of these techniques are used independently of one another to distil gin and in some cases both processes are used to create separate distillates that are blended together to form a more balanced gin.
Our unique Banik Still allows us to do both distillation processes simultaneously, resulting in a unified and balanced gin;with delicate floral and citrus flavours that sit alongside bolder juniper, pine and spicy notes.
